Our chef, Alex Sobreviela, and our guest chef, Miquel Calent, will create an amazing food proposal that will delight lovers of modern, creative cuisine. For this special event planned for 19th September, our usual menu will be tweaked to include, for only one night, two starters, two main courses and a dessert created by our guest chef. And, of course, you can pair your dinner with our carefully-chosen wine list or refreshing San Miguel beer.

Our guest chef is coming over to Ibiza from our neighbour island, Mallorca. As a very young boy, he already showed his passion for cooking, when he’d climb onto a box to watch everything his godmother, Calenta, did in the kitchen. He shared her love for Mallorca’s cuisine, which stars in his dishes aside from touches inspired by other Balearic and Mediterranean traditions. In 2004, Miquel Calent and his brother opened together a restaurant serving Mallorcan food, Ca'n Calent (Campos, Mallorca) and 12 years later, he opened CUIT (Palma de Mallorca), his most personal project where he injects all his creativity into dishes that mix modern and traditional features, always using local produce.

The dishes created by the head chef of Villa Mercedes combine Mediterranean tradition with ingredients and techniques from all over the globe. His career was mostly based in the Balearic Islands and Valencia. His work at the restaurants of Zaranda (2 Michelin Stars), Baiben and El Poblet (2 Michelin Stars) kindled the passion, respect, high standards and effort that distinguish his work. In Ibiza, he’s worked as head chef of Yemanjá and Experimental Beach restaurants.
